  • 3/4 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1 1/2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine rolled oats, flour, softened butter, salt, baking soda, and brown sugar until coarse crumbs form.
  3. In a saucepan over medium-high heat, cook chopped rhubarb with granulated sugar, cornstarch, and water until soft (5-10 minutes). Stir in vanilla extract and let cool.
  4. Press about two-thirds of the crumb mixture into an 8×8-inch greased baking dish. Add the cooled rhubarb filling on top and sprinkle remaining crumbs over it.
  5. Bake for 30-40 minutes until golden brown. Cool completely before cutting into squares.
