  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 lb boneless, skinless chicken breasts

  4. Heat oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear for 1-2 minutes on each side until golden brown.
  5. Pour the balsamic sauce over the chicken and bring to a simmer while scraping bits from the pan.
  6. Layer the tomato and mozzarella mixture over the chicken and transfer to the preheated oven.
  7. Bake for 18-23 minutes until chicken reaches an internal temperature of 165°F (75°C). Allow to rest for 5 minutes before serving.
