  • 1 lb sirloin steak
  • 4 oz Gorgonzola cheese
  • 1 cup cherry tomatoes
  • 1/2 red onion
  • 6 cups mixed spring greens
  • 1 corn on the cob
  • Balsamic vinaigrette (made with balsamic vinegar, olive oil, Dijon mustard)

Instructions

  1. Marinate the steak by mixing balsamic vinegar, Worcestershire sauce, olive oil, garlic powder, salt, and pepper in a bowl. Place steak in a ziplock bag with marinade for at least 30 minutes.
  2. Make gremolata by combining minced basil, parsley, lemon zest, and garlic in a bowl.
  3. Grill corn on medium-high heat for about 10 minutes until tender. Cut kernels off the cob.
  4. Grill marinated steak for about 4–5 minutes per side until desired doneness. Let rest before slicing.
  5. Prepare vinaigrette by whisking together balsamic vinegar, olive oil, Dijon mustard, salt, and pepper.
  6. Toss greens with half of the vinaigrette and gremolata; add cherry tomatoes, onion slices, Gorgonzola cheese, and corn.
  7. Top salad with sliced steak and drizzle with remaining dressing before serving.
