Ingredients
- 2 medium sweet potatoes
- 1 large yellow onion
- 1 medium head broccoli
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce (divided)
- 1 Tablespoon olive oil
- 1/4 teaspoon salt (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder (or chili powder)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop sweet potatoes into 1/2" chunks and onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder on a lined sheet pan.
- Bake for 20 minutes until slightly tender.
- Add broccoli and chicken brushed with BBQ sauce. Return to oven for another 15-20 minutes until chicken is cooked through.
- Shred the chicken directly on the pan and toss with remaining BBQ sauce before serving.
