  • 3 tablespoons avocado oil
  • 2 cups BBQ sauce (divided)
  • 8 cups thinly sliced romaine lettuce
  • 4 ears corn
  • 1 avocado (diced)
  • 1 cup avocado oil (for dressing)
  • 1 large egg
  • 1/2 cup unsweetened full-fat coconut milk
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon kosher salt (for dressing)
  • 1 teaspoon onion powder
  • 2 garlic cloves (minced)
  • 1/4 cup finely chopped fresh dill fronds
  • 1/4 cup finely chopped fresh parsley
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Marinate the chicken by pounding to uniform thickness and mixing with avocado oil, salt, and 1 cup of BBQ sauce. Let it marinate for at least 20 minutes.
  2. Make the herby ranch dressing using an immersion blender to combine avocado oil, egg, coconut milk, lemon juice, red wine vinegar, salt, onion powder, garlic, dill, parsley, and black pepper.
  3. Grill the marinated chicken skewers and corn until cooked through.
  4. Assemble the salad base with romaine lettuce, green onions, grape tomatoes, black beans, cilantro leaves, basil, corn kernels from grilled corn cobs, and diced avocado.
  5. Top with grilled chicken skewers and drizzle with ranch dressing before serving.
