  • 2 pounds boneless skinless chicken breasts (cut into 1-inch chunks)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (cut into 1 1/2-inch pieces)
  • 1 sweet onion (cut into 1 1/2-inch pieces)
  • 2/3 cup barbecue sauce
  • 2/3 cup teriyaki sauce
  • 3 cloves garlic (minced)
  • 1 tablespoon freshly grated ginger
  • Kosher salt and black pepper to taste

Instructions

  1. In a medium bowl, mix barbecue sauce, teriyaki sauce, minced garlic, and grated ginger. Reserve half for later.
  2. In a large Ziploc bag or bowl, combine the rest of the marinade with chicken chunks. Marinate for at least 2 hours or overnight.
  3. Assemble kabobs by threading chicken, pineapple, bell pepper, and onion onto skewers.
  4. Preheat the grill to medium heat. Brush kabobs with canola oil and season with salt and pepper.
  5. Grill for about 10 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F. Brush with reserved sauce during the last few minutes of cooking.
