Ingredients
- 2 pounds boneless skinless chicken breasts (cut into 1-inch chunks)
- 2 cups fresh pineapple chunks
- 1 red bell pepper (cut into 1 1/2-inch pieces)
- 1 sweet onion (cut into 1 1/2-inch pieces)
- 2/3 cup barbecue sauce
- 2/3 cup teriyaki sauce
- 3 cloves garlic (minced)
- 1 tablespoon freshly grated ginger
- Kosher salt and black pepper to taste
Instructions
- In a medium bowl, mix barbecue sauce, teriyaki sauce, minced garlic, and grated ginger. Reserve half for later.
- In a large Ziploc bag or bowl, combine the rest of the marinade with chicken chunks. Marinate for at least 2 hours or overnight.
- Assemble kabobs by threading chicken, pineapple, bell pepper, and onion onto skewers.
- Preheat the grill to medium heat. Brush kabobs with canola oil and season with salt and pepper.
- Grill for about 10 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F. Brush with reserved sauce during the last few minutes of cooking.
