  • 1 large or 2 small beetroots (about 170g)
  • 100g feta cheese or paneer
  • 23 garlic cloves
  • Olive oil
  • Lemon juice
  • Salt
  • Black pepper

Instructions

  1. Prepare the beetroots by washing, peeling, and chopping them.
  2. Heat olive oil in a frying pan over medium heat; sauté chopped garlic until fragrant.
  3. Add the chopped beets with a pinch of salt and sauté for 1–2 minutes.
  4. Add water, cover, and simmer for about 13–15 minutes until fork-tender.
  5. Cook pasta according to package instructions until al dente; reserve some pasta water before draining.
  6. Blend cooked beets with sautéed garlic, feta (or paneer), lemon juice, and reserved pasta water until smooth.
  7. Combine the sauce with the drained pasta in its pot; adjust consistency with additional reserved water if needed.
  8. Serve warm with garnishes like crumbled feta and fresh herbs.
