  • ¼ cup sugar
  • ¼ cup brown sugar
  • Zest from 1 lemon
  • 2 boxes puff pastry sheets
  • 8 ounces cream cheese (softened)
  • 1 egg yolk
  • â…“ cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the blueberry filling by combining blueberries, sugars, lemon zest, lemon juice, and cornstarch in a saucepan. Cook over medium heat until thickened, then let cool.
  3. In a bowl, beat softened cream cheese with egg yolk, sugar, vanilla extract, and lemon juice until smooth.
  4. Roll out puff pastry sheets; layer one on the baking sheet. Spread half the cream cheese filling and blueberry mixture on top; cover with another pastry sheet. Cut diagonal slits for steam vents and roll gently into crescents.
