Ingredients
- 4–5 ripe peaches (cored and cut into wedges)
- 1 stick (8 tablespoons) butter
- 1 1/4 cups sugar
- 3 eggs
- 1 cup all-purpose flour
- 1/4 cup almond flour
- 3 tablespoons bourbon
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9-inch cake pan with parchment paper and butter it well.
- Arrange peach wedges in the pan, sprinkle with cinnamon.
- In a saucepan, mix water and sugar to make caramel; add bourbon once light brown.
- Pour caramel over peaches.
- Beat butter and sugar until fluffy; add eggs one by one, then vanilla and bourbon.
- Whisk together dry ingredients; fold into wet mixture until just combined.
- Pour batter over peaches and bake for 30-35 minutes until a toothpick comes out clean.
- Cool for 15-30 minutes before inverting onto a serving plate.
