Ingredients

Scale
  • 1/2 cup unsalted butter
  • 3/4 cup whole milk or buttermilk
  • 2 and 1/4 teaspoons instant yeast
  • 3 Tablespoons honey
  • 1 large egg
  • 1 teaspoon salt
  • 2 teaspoons fresh chopped sage leaves
  • 1 teaspoon fresh thyme leaves
  • 3 cups bread flour

Instructions

  1. Brown the Butter: Melt unsalted butter in a light-colored skillet over medium heat until caramelized and nutty in aroma. Cool slightly.
  2. Activate Yeast: In a mixing bowl, whisk warm milk, yeast, and 1 tablespoon honey. Let sit until foamy.
  3. Combine Ingredients: Add remaining honey, egg, cooled brown butter (reserve some), salt, herbs, and flour to the yeast mixture; mix until combined.
  4. Knead Dough: Knead on medium speed until soft and slightly tacky; adjust with flour if too sticky.
  5. First Rise: Transfer dough to an oiled bowl; cover and let rise until doubled in size (about 1.5–2 hours).
  6. Shape Rolls: Divide risen dough into equal pieces; shape into balls and place in a greased baking pan.
  7. Second Rise: Cover rolls; let rise again until puffy (about 45–60 minutes).
  8. Bake: Preheat oven to 350°F (177°C) and bake for 23–27 minutes until golden brown.
  9. Brush with Butter: Brush warm rolls with reserved brown butter mixed with sage.
