- 2 cups water
- 1/4 cup seasoned rice vinegar
- 8 oz imitation crab, chopped
- 1/2 cup diced English cucumber
- 1 large avocado, sliced
- 1/4 cup Japanese mayonnaise
- 2 teaspoons sriracha
- Nori sheets (for garnish)
- Black and toasted sesame seeds (for garnish)
Instructions
- Rinse the sushi rice in a mesh sifter until the water runs clear. Cook in a rice cooker with 2 cups of water.
- Once cooked, transfer rice to a rimmed baking sheet and mix with seasoned rice vinegar. Allow it to cool completely.
- In a mixing bowl, combine Japanese mayonnaise and sriracha to create spicy mayo.
- Chop imitation crab and cucumber; prepare nori for garnish.
- In serving bowls, layer cooled sushi rice with crab, cucumber, avocado, and drizzle with spicy mayo. Top with nori and sesame seeds.
