  • 4 cups sugar or honey
  • 4 cups water

Instructions

  1. Prepare your peaches by washing and blanching them in boiling water for one minute. Transfer to cold water to cool, then peel.
  2. For light syrup, mix 2 cups sugar with 4 cups water (boil) or combine 1 1/2 cups honey with 4 cups water (boil). Keep warm.
  3. Halve the peeled peaches and pack them tightly into sterilized jars.
  4. Fill jars with peach juice and top off with prepared syrup, leaving a half-inch headspace.
  5. Process in a boiling water bath: 20 minutes for pint jars, 25 minutes for quart jars.
  6. Remove jars carefully and let cool completely before storing.
