- ⅓ cup balsamic vinegar
- 2 tablespoons dry white wine (or reduced-sodium chicken broth)
- 1 tablespoon sugar
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 4 medium yellow onions (about 1.5 pounds)
- 1 bunch fresh thyme leaves
Instructions
- Preheat the oven to 425°F (220°C).
- In a 3-quart baking dish, combine melted butter, olive oil, balsamic vinegar, white wine (or broth), sugar, salt, and pepper; whisk until well mixed.
- Peel each onion while keeping root ends intact and slice them in half from stem to root; place cut-side up in the baking dish.
- Cover loosely with foil and bake for 30 minutes.
- Remove foil, turn onions cut-side down, and bake uncovered for another 20–25 minutes until tender and caramelized.
- Serve cut-side up; garnish with fresh thyme if desired.
