  • 2 1/2 tablespoons oil
  • 2 pounds chuck steak (cubed)
  • 1 large onion (chopped)
  • 1 large bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • 2 large tomatoes (diced)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 cups beef broth

Instructions

  1. Prepare all ingredients by chopping vegetables and cubing the beef.
  2. In a heavy-bottomed pot, heat oil over medium heat and sauté onions until translucent. Add minced garlic and cook until fragrant.
  3. Brown the cubed chuck steak on all sides in the pot. Add chopped bell peppers and cook for another couple of minutes until softened.
  4. Stir in tomato paste and diced tomatoes, cooking for an additional few minutes.
  5. Sprinkle flour into the mixture, stir well, then pour in beef broth along with seasonings. Bring to a boil before reducing heat to low.
  6. Cover and let simmer on low heat for about 2 hours, stirring occasionally until the beef is tender.
  7. Once cooked, serve warm garnished with fresh cilantro.
