  • 6 cups sweet cherries (pitted and halved)
  • ⅔ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • ½ teaspoon almond extract (or 1 teaspoon vanilla extract)
  • ¼ teaspoon salt
  • ¾ cup old-fashioned oats
  • ¾ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter (cut into cubes and chilled)

Instructions

  1. Preheat oven to 400°F.
  2. For the crust, combine flour, sugar, and salt in a food processor. Add cold butter and pulse until pea-sized crumbs form. Mix in ice-cold water until dough comes together. Roll out into a circle and fit into a pie dish; chill.
  3. In a bowl, mix cherry filling ingredients: cherries, sugar, cornstarch, lemon juice, almond extract, and salt.
  4. For the topping, mix oats, flour, brown sugar, and salt in another bowl. Add cold butter and crumble by hand until mixture resembles coarse crumbs.
  5. Pour cherry filling into chilled crust; top with crumble mixture. Bake at 400°F for 20 minutes, reduce temperature to 350°F and bake an additional 40–45 minutes until filling bubbles.
  6. Cool for at least three hours before serving.
