  • 8 oz uncooked pasta (rotini or penne)
  • 2 hearts of romaine
  • Shredded rotisserie chicken or chopped chicken breasts
  • 3/4 cup mayonnaise
  • 1/3 cup grated Parmesan cheese
  • Fresh lemon juice
  • Dijon mustard
  • Worcestershire sauce
  • Minced garlic
  • Anchovy paste

Instructions

  1. In a medium bowl, whisk together Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, minced garlic, and anchovy paste until smooth. Stir in grated Parmesan cheese and pepper.
  2. Boil salted water in a large pot and cook pasta until al dente (about 10 minutes). Drain and transfer to a large serving bowl.
  3. Cut romaine into 1-inch pieces and add to the bowl along with shredded chicken. Pour the dressing over the ingredients and toss to coat evenly.
