  • 1 lb sweet potato
  • 1/4 cup smoky chipotle aioli
  • 23 TBSP chopped jalapeño pepper
  • 2 TBSP chopped red bell pepper (optional)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup all-natural mayo
  • 12 chipotle peppers in adobo
  • 1 tsp Sriracha chili sauce
  • 1 tsp parsley
  • 1 TBSP lemon juice
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

Instructions

  1. Prepare the sauce by blending Greek yogurt, mayonnaise, chipotle peppers, Sriracha, parsley, lemon juice, garlic powder, and salt in a food processor until smooth.
  2. Clean, peel, and cube the sweet potato into bite-sized pieces.
  3. Boil the cubed sweet potatoes in salted water for about 6-10 minutes until fork-tender; drain.
  4. Toss boiled sweet potatoes with the smoky chipotle aioli.
  5. Fold in chopped jalapeño and red bell pepper if using; season with cilantro, paprika, and salt to taste.
