- 1 ¼ teaspoons cream of tartar
- ½ teaspoon salt
- ½ cup canola oil
- ⅔ cup granulated sugar
- 1 large egg (lightly beaten)
- 1 cup finely grated zucchini
- 1 cup mashed ripe bananas
- 1 ½ cups chocolate chips
Instructions
- Preheat your oven to 350°F and grease an 8” x 4” loaf pan.
- In a medium bowl, whisk together flour, baking soda, baking powder, cream of tartar, and salt. Set aside.
- In a stand mixer, combine canola oil and sugar until blended. Add the lightly beaten egg and mix well, then incorporate the grated zucchini.
- Gradually alternate adding the dry mixture and mashed banana until just combined; do not overmix.
- Gently fold in chocolate chips.
- Pour the batter into the prepared loaf pan and bake for 50 to 55 minutes, tenting with foil after 35 minutes if browning too quickly. Cool slightly before slicing.
