  • 1/2 cup canola oil
  • 1/4 cup buttermilk
  • 1 tsp pure vanilla extract
  • 1 1/2 to 2 cups shredded zucchini
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F and prepare a muffin tin with liners or grease it lightly.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, cinnamon, and salt.
  3. In a separate bowl, mix the wet ingredients: oil, buttermilk, egg, and vanilla extract.
  4. Combine the wet mixture with the dry ingredients until just mixed; don’t overmix.
  5. Gently fold in the shredded zucchini followed by the chocolate chips and walnuts.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 20 to 25 minutes or until a toothpick inserted comes out clean.
  8. Cool in the tin for a couple of minutes before transferring to a wire rack.
