  • 1/3 cup unsweetened cocoa powder
  • 1 large egg
  • 1/3 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup creamy almond butter
  • 1 cup shredded zucchini (water squeezed out)
  • 2/3 cup chocolate chips

Instructions

  2. Shred zucchini using a box grater and wring out excess moisture.
  3. In a medium bowl, mix dry ingredients: almond flour, cocoa powder, baking soda, and salt.
  4. In another bowl, combine wet ingredients: egg, maple syrup, applesauce, almond butter, milk, olive oil, and vanilla extract.
  5. Mix wet and dry ingredients until combined; gently fold in zucchini and chocolate chips.
  6. Fill muffin tin cavities evenly with batter.
  7. Bake for 22-25 minutes or until a toothpick comes out mostly clean.
