Ingredients
- 3 cups uncooked pasta
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 1 small red onion (chopped)
- 1/2 cup Kalamata olives
- 3 mini cucumbers (chopped)
- 1 cup halved cherry tomatoes
- 5 ounces crumbled feta
- Salt and pepper to taste
- Dressing: red wine vinegar, olive oil, Dijon mustard, minced garlic, fresh parsley, dried oregano, brown sugar
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Drain and rinse under cool water.
- In a jar with a lid, combine dressing ingredients: red wine vinegar, olive oil, Dijon mustard, minced garlic, parsley, oregano, and brown sugar. Shake until well mixed.
