- 2 lbs boneless chicken thighs
- 1/2 cup coconut aminos (or soy sauce)
- 1/4 cup pineapple juice
- 1/4 cup tomato paste
- 4–6 pitted dates (or 1/4 cup maple syrup)
- Spices: garlic powder, chili powder, smoked paprika
Instructions
- Soak dates in warm water for 10-15 minutes until soft. Drain.
- In a blender, combine marinade ingredients: coconut aminos, pineapple juice, tomato paste, softened dates, garlic powder, chili powder, and smoked paprika. Blend until smooth.
