  • 1 pound lean ground beef
  • 1/2 medium onion (chopped)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 cups crushed Doritos (Nacho Cheese)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 (12 ounce) can corn (drained)
  • 1 (15.5 ounce) jar salsa
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Preheat the oven to 350°F.
  2. In a skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned (about 5 minutes).
  3. Stir in chopped onion, chili powder, garlic powder, and cumin; cook for another 5 minutes until onions are soft.
  4. Layer crushed Doritos evenly in a 9×13 casserole dish.
  5. Drain excess fat from the skillet; combine black beans, corn, salsa, and half the cheese with the beef mixture.
  6. Spoon the beef mixture over Doritos layer.
  7. Sprinkle remaining cheese on top and bake uncovered for 15-20 minutes until cheese is bubbly.
  8. Serve hot with your choice of toppings.
