Ingredients
- 300g uncooked orzo
- 150g baby plum tomatoes (halved)
- 100g feta cheese (cubed)
- 100g Kalamata olives (halved)
- 1 small red onion (finely diced)
- 1 small clove garlic (minced)
- 75g green pepper (diced)
- 75g cucumber (thinly sliced)
- Dressing: Extra virgin olive oil, red wine vinegar, fresh parsley, dried oregano, salt, black pepper, lemon juice
Instructions
- In a large bowl, whisk together the olive oil, red wine vinegar, parsley, oregano, salt, and pepper to make the dressing.
- Add baby plum tomatoes, feta cheese, Kalamata olives, red onion, and garlic to the dressing. Mix gently and let marinate for at least one hour.
- Cook orzo in salted boiling water until al dente; drain and cool under cold water.
- Combine cooled orzo with the marinated ingredients along with diced green pepper and cucumber.
- Squeeze lemon juice over the salad and adjust seasoning if needed before serving.
