  • 1 tbsp unsalted butter (or coconut oil)
  • 1 large egg white
  • 1 tsp vanilla extract
  • ¼ cup pure maple syrup
  • 6 tbsp unsweetened vanilla almond milk

Instructions

  1. Preheat the oven to 300°F and coat an 8-inch square pan with nonstick cooking spray.
  2. In a medium bowl, whisk together the dry ingredients: oats, flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the wet ingredients: melted butter or oil, egg white, vanilla extract, maple syrup, and almond milk until well combined.
  4. Stir the dry ingredients into the wet mixture until just incorporated. Fold in any optional mix-ins if desired.
  5. Spread the batter evenly in the prepared pan and bake for about 9-12 minutes until set. Allow cooling completely before slicing.
