Ingredients
- 2 medium zucchinis
- 2 cups cherry tomatoes
- 8 oz (220g) fusilli pasta
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon fennel seeds
- 1/4 cup vegetable stock
- 1/2 teaspoon cayenne pepper, optional
- 1 cup grated parmesan
- Fresh basil or parsley
- 1/2 teaspoon pepper chili flakes, optional
Instructions
- Cook the pasta in boiling water according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté diced zucchini until golden, then remove from skillet.
- In the same skillet, add cherry tomatoes, garlic powder, black pepper, fennel seeds, cayenne pepper (if desired), and vegetable stock. Cover and cook until tomatoes blister.
- Push tomatoes to one side of the pan; add cooked zucchini and pasta. Stir in parmesan until well combined.
- Serve immediately with a drizzle of olive oil and extra parmesan if desired.
