Ingredients
- 4 medium beets
- 4 large carrots
- 1 Tbsp olive oil
- 1/2 tsp sea salt
- 1 Tbsp butter
- 2 Tbsp honey
- 1 Tbsp fresh herbs (thyme, rosemary, dill, etc.)
Instructions
- Preheat your oven to 450°F.
- Wash and peel the beets and carrots, then chop them into uniform 1/2 inch pieces.
- On a sheet pan, toss the chopped vegetables with olive oil and sea salt until evenly coated.
- Roast in the oven for 20-25 minutes until tender.
- While roasting, melt butter in a microwave-safe bowl and whisk in honey until combined.
