Ingredients

  • 6 cups chopped kale
  • 1 cup cooked quinoa
  • 1 cup canned chickpeas (drained and rinsed)
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/3 cup pepitas
  • 1/3 cup golden raisins
  • 1/3 cup crumbled feta cheese
  • 1/8 cup fresh chopped dill
  • 1/8 cup fresh chopped parsley
  • 1 teaspoon olive oil (for massaging kale)

Instructions

  1. Rinse kale under cold water and dry thoroughly. Chop into bite-sized pieces.
  2. In a large bowl, drizzle kale with olive oil and sprinkle with salt. Massage the kale for about 1-2 minutes until tender.
  3. Add cooked quinoa, chickpeas, red onion, cucumber, pepitas, golden raisins, feta cheese, dill, and parsley to the bowl.
  4. Prepare your lemon dressing (store-bought or homemade) and pour it over the salad.
  5. Toss gently to combine all ingredients thoroughly. Serve immediately or refrigerate until ready to enjoy.
