- 1 tablespoon olive oil
- 1 pound kielbasa (cut into ½ inch pieces)
- 2 garlic cloves (minced)
- ½ cup yellow onion (finely diced)
- ½ cup carrots (peeled and finely diced)
- ½ cup celery (finely sliced)
- 4 cups chicken stock
- 1 ½ pounds potatoes (cut into cubes)
- 2 cups heavy cream (or whole milk)
- 2 cups shredded cheddar cheese
- ½ cup shredded parmesan cheese
- Kosher salt and black pepper to taste
- Chopped parsley for garnish
Instructions
- In a Dutch oven, heat olive oil over medium-high heat. Add kielbasa and cook until browned for about 5-6 minutes. Remove sausage with a slotted spoon.
- In the same pot, sauté garlic, onion, carrots, and celery for about 2 minutes until softened.
- Pour in chicken stock and cubed potatoes; bring to a boil, then reduce heat to simmer. Cover and cook for approximately 15 minutes until potatoes are tender.
- Stir in the cooked sausage, heavy cream, cheddar cheese, parmesan cheese, salt, and pepper. Cook on low heat for another 5-10 minutes until cheese melts.
- Serve hot with chopped parsley sprinkled on top.
