  • 1 tablespoon olive oil
  • 1 pound kielbasa (cut into ½ inch pieces)
  • 2 garlic cloves (minced)
  • ½ cup yellow onion (finely diced)
  • ½ cup carrots (peeled and finely diced)
  • ½ cup celery (finely sliced)
  • 4 cups chicken stock
  • 1 ½ pounds potatoes (cut into cubes)
  • 2 cups heavy cream (or whole milk)
  • 2 cups shredded cheddar cheese
  • ½ cup shredded parmesan cheese
  • Kosher salt and black pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a Dutch oven, heat olive oil over medium-high heat. Add kielbasa and cook until browned for about 5-6 minutes. Remove sausage with a slotted spoon.
  2. In the same pot, sauté garlic, onion, carrots, and celery for about 2 minutes until softened.
  3. Pour in chicken stock and cubed potatoes; bring to a boil, then reduce heat to simmer. Cover and cook for approximately 15 minutes until potatoes are tender.
  4. Stir in the cooked sausage, heavy cream, cheddar cheese, parmesan cheese, salt, and pepper. Cook on low heat for another 5-10 minutes until cheese melts.
  5. Serve hot with chopped parsley sprinkled on top.
