  • 3 1/2 cups water
  • 2 1/2 cups sugar

  2. Place the lemon peels in a 2-quart pitcher and cover with vodka. Seal with plastic wrap and let steep at room temperature for 4 days.
  3. Prepare simple syrup by combining water and sugar in a saucepan over medium heat, stirring until dissolved. Cool completely.
  4. Mix the cooled syrup with the vodka infusion, cover again, and let sit overnight.
  5. Strain out the peels using a mesh strainer, then transfer limoncello into clean bottles and refrigerate for at least 4 hours before serving.
