  • 1 ¼ cups half and half
  • ¾ cup chicken broth
  • ½ cup dry white wine
  • 12 oz. mushrooms (sliced)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • ½ cup Asiago cheese (finely grated)
  • ½ cup Parmesan cheese (finely grated)
  • 20 oz. ravioli

Instructions

  2. Heat olive oil in a deep skillet; sauté half of the mushrooms until golden brown, about 3–4 minutes per side. Remove and repeat with remaining mushrooms.
  3. Deglaze the skillet with white wine, scraping up browned bits; let it reduce by half.
  4. Melt butter and cook garlic in the skillet until fragrant.
  5. Stir in flour, then gradually add the sauce mixture while stirring until it simmers.
  6. Cook ravioli according to package instructions.
  7. Incorporate Asiago and Parmesan into the sauce until melted; add sautéed mushrooms back in.
  8. Serve over cooked ravioli and garnish with fresh parsley.
