Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease lightly.
  2. In a large bowl, mix flour, baking powder, salt, and sugar until combined.
  3. Gently fold in three-fourths of the chopped peaches.
  4. In another bowl, combine milk, egg, vegetable oil, and vanilla. Add wet ingredients to dry and stir until just combined—some flour may remain visible.
  5. Portion batter into muffin cups until three-fourths full.
  6. For the topping: mix remaining flour, sugar, cinnamon; cut in butter to form coarse crumbs.
  7. Sprinkle topping over each muffin along with remaining peach pieces.
  8. Bake for about 20 minutes or until golden brown and clean when tested with a toothpick.
