- 1 quart white vinegar
- 1 quart water
- 1/2 cup pickling salt
- 1 tsp dill seed
- 1 pod red pepper or 1/8 tsp cayenne pepper
- 3 garlic cloves
Instructions
- Prepare the brine by mixing vinegar, water, and pickling salt in a pot; bring to a boil.
- Wash the okra thoroughly and set aside.
- Set up your canner with jars inside and bring it to a simmer; wash lids and bands with soapy water.
- Remove one jar from the canner, adding dill seed, red pepper (or cayenne), and garlic cloves.
- Pack the washed okra tightly into each jar and pour in the brine, leaving 1/2 inch headspace.
- Wipe the jar rims clean, seal with lids and bands, then process in boiling water for 15 minutes.
- Allow jars to cool completely before checking seals after 24 hours.
