  • 6 boneless pork loin chops (1 inch thick)
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 cup pineapple juice
  • 1/4 cup barbecue sauce
  • 1/4 cup brown sugar
  • 1 teaspoon sea salt
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onions
  • 1 cup pineapple tidbits

Instructions

  1. Season the pork chops with salt and pepper on both sides.
  2. In a mixing bowl, combine pineapple juice, barbecue sauce, brown sugar, sea salt, ground ginger, garlic powder, and dried minced onions. Mix well.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Sear seasoned pork chops for about 2 minutes on each side until golden brown.
  4. Remove the chops and cover them with foil to keep warm.
  5. Pour the prepared sauce into the hot skillet and bring it to a boil. Reduce heat to medium.
  6. Return the pork chops to the skillet and simmer for 8 to 10 minutes until they reach an internal temperature of at least 145°F.
  7. Stir in pineapple tidbits just before serving.
