  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Red pepper flakes (to taste)
  • 2 bay leaves (optional)
  • 2 cups vegetable broth
  • 2 (14 oz) cans pinto beans (drained and rinsed)
  • Salt and pepper (to taste)

Instructions

  1. In a large pot over medium-high heat, sauté diced onion in olive oil until softened (about 4–5 minutes).
  2. Add fire-roasted tomatoes, minced garlic, diced carrots, potato, and spices; cook for 1–2 minutes until fragrant.
  3. Pour in vegetable broth and add bay leaves if using; bring to a boil.
  4. Lower heat and simmer with the lid on for 10–15 minutes.
  5. Stir in drained pinto beans and cook for another 10 minutes or until vegetables are tender.
  6. For creaminess, blend half of the soup using an immersion blender or transfer to a regular blender.
  7. Mix the blended portion back into the pot; adjust seasoning if necessary.
