  • 240 g room temperature water
  • 500 g bread flour
  • 10 g coarse kosher salt
  • 1/4 cup lightly packed brown sugar
  • 1/3 cup chopped dried cranberries
  • 1 1/2 tablespoon pumpkin pie spice

Instructions

  1. Mix the dough: In a mixing bowl, combine the active starter and water until mostly mixed. Stir in pumpkin puree until smooth, then add bread flour and mix until fully integrated. Cover and rest for 30 minutes.
  2. Stretch and fold: Sprinkle salt over the dough and use wet hands to stretch and fold the dough four times, rotating the bowl after each fold. Cover again for another 30 minutes; repeat this process two more times.
  3. Add sweetness: Mix brown sugar, cranberries, and pumpkin pie spice in a small bowl. Sprinkle over dough and perform one last stretch and fold.
  4. Bulk fermentation: Cover the dough and let it rise for about 10-12 hours until doubled.
  5. Shape the loaf: Turn dough onto a floured surface, pre-shape into your desired form, place seam-side down on parchment paper, cover, and let rise for an additional 60-120 minutes.
  6. Preheat oven: Place Dutch oven in cold oven; preheat to 450°F (232°C).
  7. Score loaf: Use a sharp knife to score your loaf before carefully transferring it into the hot Dutch oven using parchment paper handles.
  8. Bake covered: Bake for about 30 minutes at 450°F (232°C).
  9. Finish baking uncovered: Remove lid; bake an additional 15-20 minutes until crust is dark golden brown.
  10. Cool: Transfer to a wire rack to cool completely before slicing.
