Ingredients
- ½ cup ranch dressing
- ¼ cup grated parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried parsley
- 1½ lbs boneless skinless chicken breasts or thighs
Instructions
- In a mixing bowl, combine ranch dressing, parmesan cheese, olive oil, minced garlic, dried parsley, black pepper, garlic powder, and lemon juice (if using). Mix until smooth.
- Place cubed chicken in a resealable bag or bowl and pour the marinade over the chicken. Ensure all pieces are coated well. Refrigerate for at least 30 minutes (or up to overnight for best flavor).
- Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 15 minutes to prevent burning.
- Thread marinated chicken onto skewers leaving small gaps between pieces.
- Grill the skewers for about 10–15 minutes, turning occasionally until the internal temperature reaches 165°F.
- Let rest for a few minutes before serving.
