- 2 pounds yellow squash (sliced ¼ inch thick)
- 1/4 cup butter
- 1/2 cup diced onion
- 1/2 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- ½ cup sour cream
- 1 large beaten egg
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 cup crushed butter crackers
Instructions
- In a large skillet over medium heat, melt 1 tablespoon of butter and sauté the diced onion until soft (about 7–8 minutes).
- Add the sliced squash to the skillet and cook for another 10–12 minutes until tender.
- Drain excess moisture from the cooked mixture using a colander lined with a towel.
- In a mixing bowl, combine the drained squash mixture with garlic powder, salt, pepper, sour cream, beaten egg, cheddar cheese, and ¼ cup Parmesan cheese.
- For the topping, mix melted butter with crushed crackers and remaining Parmesan cheese.
