  • 1/4 cup sugar
  • 1 1/2 cups flour
  • 1 cup fresh lemon juice
  • 3/4 cup chopped strawberries
  • 1 1/4 cups sugar
  • 4 large eggs
  • Powdered sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, beat together butter and sugar until fluffy. Add flour and salt; mix into a crumbly dough.
  3. Press dough into the pan and bake for about 15 minutes until lightly golden.
  4. While the crust bakes, blend lemon juice, lemon zest, strawberries, and sugar until smooth. Blend in eggs, then add flour and baking powder until combined.
  5. Pour filling over the hot crust and bake for another 22–25 minutes until set.
  6. Cool completely before slicing and dust with powdered sugar before serving.
