- 2 bunches kale
- 3–4 fresh peaches
- 1 cup blueberries
- 1/4 cup pepitas
- 1 lemon
- Olive oil
- For the vinaigrette: 4 lemons, 2 Tbsp + 2 tsp honey, 1/4 cup olive oil, cracked black pepper
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Spread pepitas on the baking sheet and toast for 5–6 minutes until golden; set aside.
- In a small bowl, whisk together lemon juice, honey, olive oil, and black pepper; refrigerate.
- Remove kale leaves from stems, chop into bite-sized pieces, and massage with olive oil and juice from one lemon for about 5 minutes.
- Add diced peaches and blueberries to the kale.
- Drizzle vinaigrette over the salad and toss gently to combine.
- Top with toasted pepitas before serving.
