Ingredients
- 1 pound rotini
- 1 pound lean ground beef
- 1 packet taco seasoning
- 15 ounces canned black beans (drained)
- 8 ounces canned corn (drained)
- 2 cups halved cherry tomatoes
- 16 ounces Catalina dressing
- 3 tablespoons sour cream
- 9 ounces Nacho Cheese Doritos (crushed)
- 2 cups shredded iceberg lettuce
Instructions
- Cook the rotini according to package instructions in boiling water. Drain and rinse with cold water.
- In a skillet over medium heat, brown the ground beef and drain excess fat. Add taco seasoning and cook for another 5 minutes.
- In a large mixing bowl, combine cooked rotini, beef, black beans, corn, and cherry tomatoes.
- Whisk together Catalina dressing and sour cream; pour over the pasta mixture and stir until well coated.
