Ingredients

  • 2 lbs chicken thighs (or breasts), cut into 1-inch cubes
  • 1/3 cup brown sugar
  • 1/3 cup low sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger, minced
  • 1 tbsp honey
  • 1/2 tsp sesame oil
  • Skewers for grilling

Instructions

  1. Prepare the teriyaki sauce by combining all ingredients in a saucepan, simmering until thickened.
  2. Marinate chicken in half of the cooled sauce in a ziplock bag for at least 30 minutes.
  3. Preheat the grill to medium heat and thread marinated chicken onto skewers.
  4. Grill for about 20-30 minutes, turning frequently and basting with remaining sauce until the internal temperature reaches 165°F.
  5. Serve garnished with chopped green onions and sesame seeds.
