Ingredients

  • 1 pound ground Italian sausage (spicy recommended)
  • 3 garlic cloves (minced)
  • 1 medium white onion (diced)
  • 1.5 pounds Yukon Gold potatoes (diced)
  • 5 to 6 cups chicken stock
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream
  • fine sea salt and freshly-ground black pepper
  • crumbled bacon (for garnish)

Instructions

  1. In a large stockpot over medium-high heat, cook the sausage until browned, breaking it into small pieces. Use a slotted spoon to remove and set aside, reserving a tablespoon of grease in the pot.
  2. Sauté onions in the reserved grease for about 5 minutes until translucent; add minced garlic and cook for another minute.
  3. Stir in diced potatoes and chicken stock along with the cooked sausage. Bring to a simmer and cook for about 10 minutes until potatoes are tender.
  4. Add chopped kale and heavy whipping cream; let simmer for an additional 5 minutes. Season with salt and pepper to taste.
  5. Serve warm, garnished with crumbled bacon.
